These are a few of my Favorite FITNESS Things!

I have collected a number of running accessories over the last few years. Some are great and some are a waste of money! Whether you are a veteran or just beginning here are a few things I like: 

Supplements, Proteins & Enhancers

There is a sleep reminder alarm- which helps me to go to bed at the same time every night and gently wakes me up when I am in a light sleep cycle. I love tracking my steps and food!
I have the older generation, which isn't that old! (1year) and its significantly cheaper!





If you don't want to spend a lot of money on the wristbands, Nike+ is a great option. It does great tracking your distance and average speed. There is an app that uses GPS on your phone but I also have this! Nike+ fits inside or on your shoe and will connect to your iPod.

KT Tape helps during your workout prevent injury! I use this on my knee. I tore my ACL, MCL, meniscus, patella in 2009, and occasionally I get swelling in my joints. I like this because I feel like I am getting additional support without having to wear my Don Joy brace
There are instructions that show you how and where to put the tape strips for various injuries 



GU and Shot Blocks are a MUST when working out and running for a long period of time. These are easy to eat and taste pretty good.

Summer Eats [Recipe] Fresh Bruschetta

With Summer in full swing I can't get enough of all the delicious fruits, veggies and herbs in season! 
I decided that a warm day needed a cool fresh treat. Home made Bruschetta. 




I couldn't help but buy a large case of cherry tomatoes. I love the sweet taste, so naturally I couldn't wait to make this! It has been a few summers since I've made it, but I've turned tomato haters to love this (including Evan).

I went to buy a few leaves of Basil at the store. I was expecting to pay about $3 for the herb but couldn't find it! I asked the store associate and she mentioned they didn't have any unless you wanted to buy the bush! It appeared the bush was $2.99 so I couldn't help but buy the entire thing! BARGIN! 




Ingredients:

Cherry Tomatos 1 large case
6-8 Fresh Basil Leafs chopped. 
1 Tsp Olive Oil 
1 Tsp Balsamic Vinegar- For dipping or drizzling over
Pink Himalayan Salt to taste 
Pepper to taste
Mozzarella (sliced)

Fresh Bread- I both Asiago and Black Pepper Bread from Trader Joe's. 

Instructions:

Cut cherry tomatoes in half
In a bowl combine cherry tomatoes and Fresh Basil
Add Salt and Pepper to taste. Mix together
Slice your bread and lightly toast
After toasting on a plate lay out your bread slices. Add Mozzarella slices on top and then your bruschetta mixture. 
Drizzle your olive oil and balsamic vinegar over your bread! VOILA! DELICIOUS











Now I have this plant to take care of. My biggest fear isn't killing it, but BUGS! 
But since they are herbs and I will be using them to cook I don't want to spray any chemicals... so it's time for doTerra.

I found this little guide! So since we have beetles, flies, mosquitoes, moths and spiders I used Lemongrass and Peppermint. We probably have more bugs but I'm just using the oils I have! 

I combined about 4-5 drops of each oil into a spray bottle mixed with filtered water and sprayed my little plant!

So along with watering your plants, just give em a little spray to keep the bugs away!

icky yicky sticky [essential oil recipe]

There is one thing about New York that I am paranoid about, touching something gross! I literally fear unknown sticky, stinky, poopie or gooey substances. I am 100% conscious to NOT touch anything from Subway doors, poles, railings, ticket kiosks, bathroom knobs.... etc.  I went into the City the other day to meet some friends from SUU. I really noticed how I consciously didn't touch ANYTHING but I was still spraying sanitizer on my hands. Call me crazy, but I am a germ freak and I know it! 


Evan is a Doctor he constantly sanitizes and we have bottles of hand sanitizer EVERYWHERE. The car, kitchen, front door.... you name it. You have two germ freaks living in a house. The only thing I hate is the alcohol smell that lingers after a good squirt of sanitizer.

Thankfully Jackie (the paleo mama) sent me a sample of her sanitizer a few months back, and I fell in love with it. I am actually obsessed. Not only does it smell divine, it doesn't leave my hands dry and cracking even though I am constantly using the sanitizer throughout the day. Jackie is the Essential Oils QUEEN.

Witch Hazel 
Water

Directions: 
Fill your bottle half way with water. 
Add your essential oils and your coconut oil. 
Fill the rest of your bottle with witch hazel. 
BOOM you're done and you've got some awesome hand sanitizer that smells awesome and won't dry out your hands.

Sore Throats and Movies.

This morning Evan woke up with a sore throat, feverish and chills. YUCK! He stayed home from work fearing he would get other patients/doctors sick. So the only thing to cure sickness is movies and laying on the couch. Before I knew it MY throat was hurting. UGH. There is nothing I hate more than a sore throat..... 

The cure? A sore throat bomb!

Day 18: bad habits broken

They say it takes a solid 2 weeks without flaws to break a habit. Good Food, Good Eating, it feels like we have been eating this way for a long time. Cooking doesn't feel like a chore and eating the green veggies don't feel like a challenge.  

My house is a mess- there are stacks of paper EVERYWHERE. The house is actually clean, just lots of piles for camp are spread out all over the living room as I prepare. 

However I went on a deep cleaning rampage today. If you know me I love clean baseboards. It sounds really stupid but when I was house hunting in Las Vegas last year the realtor asked me what's important to me in a house, I replied "clean baseboards". She laughed but wasn't sure if I was serious or not. It's one of those things we all tend to neglect, but as a kid I remember wiping down the baseboards and getting all the dust that sits in-between the baseboard and carpet. It now has become one of those weird things I love. Today was the day, and I actually completed this task with my own homemade all purpose cleaner. 

1/2 cup water
1/2 cup apple cider vinegar 
20 drops of lemon DoTerra  



For lunch I decided to make some Shrimp Scampi. I bought Shrimp and zucchini, only to find out Evan "isn't really a shrimp guy". So I hogged to all to myself and it was pretty good. 
I don't own one of those noodle making things so I used a vegetable peeler and it worked perfectly fine. 

Shrimp Scampi 

Ingredients 

3 zucchini 
1 cup fresh shrimp
1T minced garlic 
1T crushed red peppers
1T coconut oil 
pepper to taste 
pink salt to taste

cut/peel zucchini into strips 
in a pan put your zucchini, add shrimp, garlic, crushed red peppers, coconut oil 
on medium heat cook until zucchini is soft and shrimp is done
add salt and pepper to taste




I cooked dinner ahead of time because I went out with the Sister Missionaries (Howard & Barnes) ! The initial appointment fell through but we went to a referral. I enjoy going with them especially since I didn't go on a mission- its a rather delightful adventure. Shoutout to them for their hard work and huge thanks for the Birthday Chocolates. I love Lindt Chocolates... a lot. I'm trying really hard to not eat the entire bag, and I may have to hide them from Evan ;).

For Dinner we had Chicken Kabobs. 
Evan really liked these a lot- I used a paleo recipe but I didn't have all the TRUE ingredients, so I used what I had and called it close enough 

Ingredients 

2 lb chicken pieces 
1/4 cup soy sauce or wheat free soy substitute 
1/4 cup white wine vinegar 
2 T honey
2 tsp fresh grated ginger 
1T minced garlic 
dash of pepper 
siracha sauce (optional) 
Scallions (optional) 
Sesame seeds (optional)
bambo skewers 

heat oven to 350 degrees 
mix sauce ingredients together; soy sauce, white wine vinegar, honey, grated ginger, garlic, pepper, siracha sauce 
cut chicken into small cubes pieces and put onto skewers 
put into glass pan and pour mixture over chicken 
cook for 20-25 minutes 
add sesame seeds and scallions

Day 15: Shopping, Cookies, Happy

Mondays: The most productive day of the week. Seriously. We were up at 5:30am, Evan went to work, I went for a run, did laundry, cleaned the house, did a bunch of camp emails and got ready all before 9:30 am. If I were like this everyday, who knows what I could do. 

Spring will never come. My run this morning was 20 degrees, sunny and freezing. 



In the past 3 days I've managed to break our apple slicer, can opener and melt our spatula. 
It's Birthday Week so I decided to incorporate a little shopping into my day at TJMAXX. I love that place! I obviously was looking for a few new kitchen tools and well there were a few things I didn't have. Thanks to a few Wedding Gift Cards and their wonderful 50%-75% sale on Kitchen Aid this is what I came up with. Yep all the tools were $1.50-$5.00, and I love the colors!  
Beautiful right??


Costco was my next stop! They have some awesome cooking ingredients that are expensive at the local stores! 

Himalayan Pink Salt $3.98 at Costco, $12.99 at the local store for a 3oz bottle! 
What? INSANE. This salt is extremely flavorful and so pure. 


Agave 2 bottles at Costco for $5.98. A small little 12oz bottle at the local store was  $4 something 



Good Deals, Good Steals today! 


Evan requested Chocolate Chip Cookies... He thought they were so delicious, I was surprised how good they were. I ate some batter and 2 cookies. I forgot how allergic I am to Almonds so that made me super sick. But they were so good it was almost worth it... almost. I loved eating them in the moment. 

 PALEO CHOCOLATE CHIP COOKIES 






Ingredients 

3 cups sifted almond flour 
1 cup dark chocolate chips 
1/3 cup honey
1/2 T pure vanilla extract 
1/4 tsp pink salt, or sea salt
1/2 tsp baking powder 
1 egg
coconut oil 

Preheat oven to 350 degrees
In a mixing bowl wisk egg and combine salt, vanilla extract, honey and baking powder
after ingredients are combined add the chocolate chips 
sift almond flour in and mix together
cover baking sheet with coconut oil 
use a small ice cream scoop to make cookies into small balls on the pan
bake for 15 minutes then allow to cool before taking them off the pan


Yes that's correct, we had dessert before dinner 

Lemon Honey Chicken




Ingredients 

2 lbs chicken tenderloins 
scallions 
1 T minced garlic
1 cup chicken broth
1/2 yellow onion
2 T honey 
4 T lemon juice
1/3 cup coconut flour 
1 egg
1 T coconut oil 

chop the chicken into small pieces 
whisk egg in a mixing bowl 
dip chicken pieces into egg 
drip excess egg and roll pieces into coconut flour 
melt coconut oil in a pan 
cook chicken pieces in the pan with medium heat until brown 
in a separate pan brown garlic and chopped onion 
combine broth , honey, lemon juice into the pan with garlic and onions and let simmer 
add browned chicken 

garnish dish with chopped scallions

He got off early and helped me do some cooking/tasting. 
This meal was Evan approved. 

On another note Almond makes my stomach feel like death 
I rubbed some DoTerra DigestZen  (which is a blend of Ginger, peppermint, tarragon, fennel, caraway, coriander and anise ) on my stomach and within the hour the pain and nausea was pretty much gone but holy cow I was feeling so much better.
