This morning I thought to myself "I could get used to this"! Thus far the food has been really good until today. Not that its hard to eat healthy, but I didn't plan ahead so I had no snacks and therefore I was hungry and frustrated while I was trying to cook. When it came to my dessert it was an epic fail and I almost gave up. But once I actually sat down to eat dinner it was fine. 
I've started to see some progress. My hives are going away and eating isn't causing flare ups! I've lost a pound. *I'm not in this for weight loss, just getting rid of some issues like allergies and cholesterol*
Breakfast was delicious 
Egg baked inside an avocado for 25 minutes at 350 degrees. Easy and delicious
For dinner I made
 Coconut Chicken with a Mango Sauce 
Wet Mixture
1 T coconut oil 
5 T coconut milk 
1/2 juice of a lime 
Dry Mixture 
1 c coconut flour 
1/4 c shredded coconut 
1 lb chicken tenders 
pre-heat oven to 350 degrees
Take your chicken tenders and dip into the wet mixture
put your dry mixture onto a plate 
roll chicken pieces into the dry mixture until they are completely covered
bake chicken in the oven for roughly 25-30 minutes or until thoroughly cooked
Mango Sauce 
1 T coconut oil
1T pure vanilla extract 
3/4 C coconut milk 
1 pureed mango 
The cauliflower rice with a hint of lime was actually pretty good. I had my doubts but it was better than expected. Regardless its still not rice, but I think it will do... for now. 
 In fact I almost lost it and went to buy a big tub of cookies from Costco.  
Luckily I had a quick fix of 
banana pudding. 
Ingredients 
2 bananas 
1 tsp pure vanilla extract 
2 T chia seeds. 
1. combine all ingredients into a food processor and blend it until smooth. 
If you're hoping this will be like the Magnolia Bakery banana pudding in NYC you'll be disappointed.  If you are expecting a banana, you'll be pleasantly surprised. 
Carry on. Day 3 wasn't that bad
