Day 2: NO sugar? hmmm this might kill me.

Unfortunately the other day I bought a Diet Coke which I didn't get to before the start of the 30 day challenge. Yep! You heard me correctly, its going to be starring at me every time I open the refrigerator. *sigh* I kicked the habit of drinking the Diet Coke for about 6 years but decided one every now and then is okay. Right now is "Now" but I will resist. I promise I won't touch it!
 I think the biggest challenge is weening me off of SUGAR. Diet Coke, gummy bears, &  mint oreos.

Ask me what I had for lunch? Leftovers, and it was good.
What I made yesterday, is todays delicious treat for lunch-o. 
In fact the creamy cheesy chicken casserole tasted even better on day 2. 
However, I dressed it up by stuffing it inside an avocado- holy delicious. I wasn't so sure about the avocado, I was more worried about the texture, but it was so awesome. 

*My paleo recipes are doubled so I have leftovers- I like to graze- I figure I might as well graze on something already made so I don't mess up, because I really suck at sticking to diets* 

I feel like I have so much energy today. I did Insanity this morning and it felt good, but I still feel like I could go run 500 miles. Maybe tomorrow.... ;)

I've been trying to drink a lot of water, but it's getting kind of boring already
I've been dropping essential oils into my water. 
I love DoTerra- these oils are cleansing and so refreshing to drink.

Slim & Sassy is a blend of Grapefruit, Lemon, Peppermint, Ginger, and Cinnamon essential oils. This  oil not only tastes awesome but it helps increase Metabolism! Love that.


Evan doesn't care for the Slim & Sassy Blend so I just give him Lemon or Peppermint

DINNER 
Spaghetti & Tomato Cream Meat Sauce 

Ingredients 

2 servings Ground Beef 
1 large spaghetti Squash
1 cup marinara sauce 
1 T garlic powder
1 T onion powder
1 cup coconut cream
salt and pepper to taste

1. cook ground beef- drain any extra grease. 
2. cook spaghetti squash in the oven for 30 minutes at 350 degrees. 
3. cut squash in half the long way, and remove seeds. 
4. in a pan with medium heat combine meat, marinara sauce, garlic powder, onion powder, coconut cream, salt and pepper. 
5. Pour sauce over spaghetti squash boat. 
6. enjoy





Again I love my dessert so I made

Almond Joys

1 T Dark Chocolate Morsels 
5 T Shredded Coconut 
Unsweetened coco powder to dust 


1. melt chocolate morsels
2. mix coconut into melted chocolate 
3. make it to small balls and place on wax paper 
4. dust coco powder 
5. refrigerate for 10 minutes
