Homemade Sweet Potato Fries

Last week I had a wicked craving for fries. All I wanted was something greasy, salty and super delicious. Obviously waffle fries from Chick-fil-a are beyond heaven, and totally my favorite, but I prefer to keep the arteries slightly open. Today I satisfied that craving... Homemade sweet potato fries! They are easy, delicious, you won't have to fork over a limb and there is no need for deep frying.

Buying the bag of frozen ready to cook fries is quick and easy, but so is this. Who doesn't love homemade freshness? It's like going to Mickey D's drive thru and getting that bag of hot fries.
Here is what to do:

Ingredients
  • 2 Sweet Potatoes
  • 2 Cups of warm water
  • 1 T. Corn Starch
  • 3 T. Extra Virgin Olive Oil
  • Garlic Powder
  • 1 tsp Salt
  • Pepper
Pre-heat your oven to 425 Degrees
Cut raw sweet potatoes into 1/4 inch slices. Soak your slices in a bowl of warm water for about 15-20 minutes. After soaking potatoes, pat them dry and lay them out on a metal cooking sheet. Dust your corn starch over the potatoes. (you don't have to use the entire Tablespoon). Sprinkle garlic powder, salt and pepper over the slices to taste. Finally drizzle the olive oil over your seasoned sweet potato fries.

Cook your fries in the oven for 15 minutes. Then, with a spatula flip your fries and then put them back in the oven for another 15 minutes.

Evan and I quickly devoured this. Try it out! Let me know how it goes :)
