We've successfully been married ONE month.
We took this Picture at our Hotel in SLC! We jumped on the bed for probably 15 minutes just laughing!
Every day has been a blast but my domestic talents aren't really talents! Luckily Evan will gladly eat anything! I've become a Pinterest Crazed Wife! I've taken a lot of risks by trying all kinds of recipes it's been hit and miss, but there are a few that have been rather tasty!
Evan LOVES this one! In fact he asks me for this one all the time!
Originally the recipe called for Mayo, Sour Cream, and other fatty heavy creams, but I changed it, and it turned out really good! So aside from the little bit of cheese and the added carbs from the chips- Its a good treat that won't go straight to your hips.

TORTILLA CHIP & PEPPER JACK CRUSTED CHICKEN
WITH AVOCADO & JALAPENO RANCH
4 boneless, skinless chicken breasts
One 12-ounce bag tortilla chips or multigrain chips
4 ounces Pepper Jack cheese, shredded
1 C Plain Greek Yogurt
1/2 T garlic powder
1/2 T cumin
1/2 T chili powder
2 teaspoons lime juice
FOR THE SAUCE:
2 C Plain Greek Yogurt
1/4 C buttermilk
1 packet Ranch dip mix
1 T garlic powder
1 T onion powder
1-3 T diced jalapeno slices (from a jar)
Put about half of the bag of chips into the food processor and blend then add the cheese to the mixture. You should have 2-3 C crushed chips. (Reserve the rest of the bag in case you don't have enough- or just buy the bag at Costco so you'll have plenty. )
Whisk together the yogurt, garlic powder, chili powder, cumin, and lime juice. Dredge the chicken breasts into the yogurt mixture and then into the crushed chips. Make sure it is completely covered in the chips When all the chicken is coated, put it in the oven and bake for about 25-30 minutes or until the chicken is done all the way through and the chips are crispy.
Blend the sauce ingredients together and serve over the chicken.
